The Prospector Grille serves 4 star cuisine with regionally sourced ingredients in the quaint mountain hamlet of Rico, Colorado. Chef Eamonn O'Hara, a native of Ireland, was formally trained in the US and came to the San Juan Mountains after a stint at Los Angelels' 5 star Hotel Bel Air.
Chances are, if you eat at the Prospector Grille , you will be dining on a table built by local craftspeople from re-purposed timbers used in old mining structures. And most likely, you will also be dining with some of them, as the Prospector Grille knows how to treat its locals, as well as its visiting guests.
