The Farm Bistro is a casual yet elegant farm to table restaurant in the heart of historic downtown Cortez, Colorado. The menu features locally grown produce and meat, and is a hub for diners seeking fresh and flavorful cuisine. Started by chef/owner/farmers Rusty and Laurie Hall in 2009, the bistro began as an outlet for their organic farm, and has grown to source fresh ingredients from many area farmers and ranchers.

Everything is made fresh from mostly local, mostly organic ingredients. Much of the produce comes from our Seven Meadows Farm and, seasonally, from other local farmers.
Locally or Family Owned Business Notes
Owners Rusty and Laurie Hall started this bistro as an extension of their organic farm. Not only does much of the produce come from their farm, but the compost generated in the kitchen returns to their farm to feed chickens and make soil!
